COST cooking (cook once serve twice)

I am going to share with you one of my family's favorite C.O.S.T. cooking meal trails.Tonight's Tortilla Soup Seasoned Chicken is Thursday night's Chicken Enchiladas. That is C.O.S.T. cooking! (Cook once, serve twice). We love Homemade Gourmet's Tortilla Soup seasoning and use it for soup and for seasoning chicken in the slow cooker (mine is the Hamilton Beach 6-Quart Slow cooker). This chicken recipe is one of those "smoosh meals" where you add chicken, the tortilla soup seasoning, and diced tomatoes with green chiles to a Ziploc bag "smoosh" the ingredients together and then freeze. When you are ready for it....just "dump" in the slow cooker from the Ziploc bag. This evening we gathered around the dinner table and enjoyed the Tortilla Soup seasoned chicken breasts that I sliced and stuffed in cheesy quesadillas with a side salad. After dinner I shredded the chicken and made enchiladas with the Lawry's seasoning. It was a cinch to put together and another dinner is done.All I have to do is heat up the casserole and toss a salad together. My family loves this meal trail.
