Menu Plan for the week


Rice Cooker Meatballs
Frozen Meatballs
+Spaghetti Sauce + Cooked Elbow Pasta in Rice Cooker
= One Minute Dinner (dinner prepped in about a minute)
A perfect example of C.O.S.T. cooking.
The pasta was already cooked and in the fridge from a previous meal.

Chicken Cacciatore (slow cooker)
INGREDIENTS:
1 1/2 pounds boneless skinless chicken breast tenders
1 packet Spaghetti Sauce Seasoning Mix 
1/3 cup dry red wine (or use low sodium chicken broth)
1 8oz can of tomato sauce

Cooking Instructions:
Place all ingredients in a slow cooker; cover and cook on LOW for 6 to 8 hours or on HIGH for 5 to 6 hours. Serve over cooked angel hair pasta. 

Chili Cornbread Casserole
INGREDIENTS:
Cornbread Mix (prepared)
1 1/2 pounds lean ground beef
1 (15-oz.) can kidney beans, un-drained
1 (8-oz.) can tomato sauce
1 cup thick and chunky salsa
1 cup shredded Cheddar cheese
Cooking instructions:
Preheat oven to 400 degrees.  In a large skillet, brown ground beef till cooked through; drain. Add beans and their liquid, tomato sauce and salsa; blend well; transfer to a casserole dish. Sprinkle...no cover with cheese! Yummy.

Italian Roast (slow cooker)
Roast+Spaghetti Sauce Mix+can of diced tomatoes
Add to slow cooker and cook on low for 6-8 hours.

C.O.S.T. cooking vegetable beef soup
Use leftovers from roast and make soup with this mix.
