One Minute Salsa Chicken
     Need a quick and easy meal for the slow cooker? My  family begs for nachos, tacos, quesadillas, and burritos on a weekly basis.  If you would love an easy Mexican dinner tonight and a ton of leftover shredded chicken for meals later...then this easy slow cooker meal is perfect! Got kids in the kitchen? This is a great meal for little hands to help with. They can easily dump the ingredients into the freezer bag or slow cooker with a little help from mommy.

     All you need for this recipe is a bag of frozen, boneless, skinless chicken breast and a jar of salsa. It takes less than sixty seconds to get this meal assembled and into the slow cooker. Cook for 4-6 hours on high or 6-8 hours on low. When you get home from a busy day, all you need to do is shred the chicken with a fork and serve over rice. Or use the chicken for tacos or whatever you like. It makes a ton and keeping a ziploc bag of shredded mexican chicken in the fridge will come in so handy for making new meals.  I use mild salsa for this recipe to keep it kid friendly. We love making  tacos with this yummy salsa chicken and then  taco soup with the leftover chicken for a great COST (cook once serve twice) meal.
