One Minute Santa Fe Salsa Chicken

Just get home with a big bag of frozen chicken breasts from Costco or Sam's Club? Here is a quick one minute prep (you can assemble this meal in about a minute) recipe for you to freeze for an easy meal later in the week. This is currently in my slow cooker to enjoy after church tonight.  I have some instant brown rice all ready to heat up and a frozen broccoli steamer bag to cook in the microwave. Dinner is done!

Santa Fe Salsa Chicken
6   chicken breasts, boneless skinless  
1  cupYour favorite salsa 
1  15-ounce can black beans, drained  
1  11-ounce can corn, drained  
1  10-ounce can tomatoes with green chilies  
8  ounces cream cheese, cut in cubes  

This is a quick recipe that can be
prepared ahead and go into your freezer for later!

Prep Now and Cook Later- Combine all ingredients, except
cream cheese in a gallon sized zip-top freezer bag. Seal
and SMOOSH to blend ingredients. Label as Santa Fe
Chicken and list cooking options.

Cooking Options:

BAKE: Pour meat and marinade into a large baking
dish and cover. Bake at 350 degrees for 35 minutes.
Stir in cream cheese and bake and additional 15
minutes or until chicken juices run clear.

SLOW COOKER: If frozen, thaw enough to slide contents out of freezer bag.
Pour meat and marinade into slow
cooker. Cook on high for 4-6 hours or on low for 5-7
hours. Stir in cream cheese during last hour.
