Sometimes I Cook

Back to School is here. September for my family, and I suspect probably yours too, means an exciting time of new beginnings, a fresh box [or two or three] of perfectly sharpened crayons, new pencils topped with unblemished pink erasers. September means all things fall, pumpkin and back to school related.  I love partaking in annual traditions such as waking up a handful of unsuspecting youth group kids with fresh donuts, cleaning out closets, updating countless school related forms and time to dust off my beloved slow cooker. Maybe even grill a little while we still can.


Here is what's on the menu this week:



Lawry's Hawaiian Seasoning + Chicken Breast
to Grill or cook on Low in Slow Cooker for 4-6 hours 



Our Favorite: Taco Soup 


Ingredients
1 Homemade Gourmet® Taco Soup Mix (or 5.5 tablespoons of the pantry staple)
1 15.25-ounce can corn, undrained
1 14.5-ounce can diced tomatoes, undrained
1 can water
1 15.5-ounce can pinto beans, undrained
1 4-ounce can chopped chilies, undrained
1 pound cooked hamburger, drained or 1 cup shredded, cooked chicken (optional)

Slow Cook on Low 4-6 hours 


Kansas City Pork Chops 
Sweet Baby Rays Marinade + Kansas City Rub
Cook in Slow Cooker 4-6 hours on Low 

FOR MARINADE- Place seasoning packet, marinade and meat in zip top bag.
Close bag securely and squeeze bag to blend ingredients thoroughly. Marinate 2 hour or overnight in refrigerator.

BAKING OPTION:
1 . Preheat oven to 350 degrees.

2. Place seasoned or marinated (with marinade) meat
in a greased 13x9x2 baking pan; cover with aluminum foil. Bake 45 minutes to 1 hour or until meat juices run clear.

GRILLING OPTION:
1 . Prepare meat according to desired preparation
method listed above. Preheat grill to medium heat
and lightly brush grate with oil.

2. Grill chicken breasts or pork for 10 minutes on each
side or until meat is no longer pink in the center.
Grill steaks for 5-10 minutes or until desired level of
doneness is achieved. 

And lastly [don't judge. It's better than drive-thru or Little Ceasar's Pizza!] I've got Schwan's in my Freezer [I know it's not the 80's]. I LOVE my Schwan's delivery. Makes my life more sane.  A girl has gotta do what a girl has gotta do.
